Today the Swiss weather is gloomy which has resulted in me refusing to leave the house just yet. And to get over my nicely formulated, personally addressed-to-me job rejection letter from a world famous Swiss sweetie company, I decided to brighten up my day and those of whoever pop into the house today with some lemon-vanilla pretzel cookies.
I mixed:
170 g (3/4 cup) Butter which was slightly softened in the microwave | |
190 g (1) cup castor sugar | |
~2 teaspoons grated lemon peel (1/2 a Lemon) Juice of the 1/2 lemon as much vanilla essence as you wish | |

Butter & sugar can be creamed together, then add the egg & flavourings, and finally add in the flour and mix everything with a wooden spoon. Divide the dough in two and put in the fridge (or freezer if time is limited). Pre-heat oven to 180 °C (375° |
