When Brain feels like a Pretzel...make Lemon Cookies

Today the Swiss weather is gloomy which has resulted in me refusing to leave the house just yet. And to get over my nicely formulated, personally addressed-to-me job rejection letter from a world famous Swiss sweetie company,  I decided to brighten up my day and those of whoever pop into the house today with some lemon-vanilla pretzel cookies. 



I mixed:
170 g  (3/4 cup) Butter which was slightly softened in the microwave
190 g (1) cup castor sugar
~2 teaspoons grated lemon peel (1/2 a Lemon)
Juice of the 1/2 lemon
as much vanilla essence as you wish
1 egg
250 g (2 cups) white flour and add some baking powder for poofyness

Butter & sugar can be creamed together, then add the egg & flavourings, and finally add in the flour and mix everything with a wooden spoon. Divide the dough in two and put in the fridge (or freezer if time is limited).  Pre-heat oven to 180 °C (375°F) and while things are getting hot, roll out the dough into two long logs (~12 inches) & cut into 1/2 inch pieces. Roll each one to about 8 inches and form a pretzel.  For a glossy effect, brush each one with some beaten egg and pop in the oven for 8-10 minutes. For a beautiful finish, dust with icing sugar. V
